Ingredients

Quantity Ingredient
2 courgettes
4 tablespoons olive oil
2 onions
1 small goat’s cheese
4 slices seed bread
4 pinches thyme
salt
pepper

Method

  1. Slice the courgettes, place on a baking tray and drizzle with 2 tablespoons of olive oil and a pinch of salt. Put under the grill for 15 minutes, Thinly slice the onion and sauté in a frying pan with the remaining olive oil for about 5 minutes. Cut the cheese into shavings. Top the slices of bread with the sautéed onions, still-warm courgette and cheese shavings and sprinkle with thyme. Season with salt and pepper before serving.
