Ingredients

Quantity Ingredient
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 lemon, Juiced
3 large slices wholemeal bread
150g feta
1 dozen black olives, pitted
4 sprigs mint
1/2 lemon, zested
salt
pepper

Method

  1. Mix the olive oil, balsamic vinegar and lemon juice together, then brush onto the slices of bread. Cut the feta into thin slices and lay them on the bread. Chop the olives and snip the mint and scatter over the bread, along with the lemon zest. Season with salt and pepper before serving.
