Ingredients

Quantity Ingredient
1 tablespoon maldive fish or fish sauce
2 tablespoons vegetable oil
2 leeks, thinly sliced
1 teaspoon chilli flakes
1/2 teaspoon ground turmeric
1 teaspoon salt

Method

  1. Crush the Maldive fish in a pestle (if using) and mortar.
  2. Heat the oil in a large wok on a medium heat, then add the leeks and stir-fry for 5 minutes until wilted. Add the chilli flakes, turmeric, salt and Maldive fish or fish sauce. Stir, then cover and cook for 15 minutes on a very low heat.
  3. Remove the lid, stir, then cook, uncovered, for a further 10 minutes until sticky, stirring occasionally. Taste and add salt as needed. Serve hot with rice.
