Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 garlic cloves, minced
2.5cm ginger, peeled and minced
1 onion, finely sliced
1 red pepper, finely sliced
1 yellow pepper, finely sliced
2 tomatoes, halved and sliced
1 teaspoon chilli powder, (less or more, depending on strength)
1 tablespoon tomato ketchup
360g raw prawns
1 teaspoon salt
1/2 lime, juiced

Method

  1. Heat the oil in a wok, then add the garlic, ginger and onion and stir-fry for 3–4 minutes. Add the red and yellow peppers and tomatoes and fry for a further 5 minutes until the peppers are softened.
  2. Add the chilli powder and ketchup and stir-fry for 30 seconds before adding the prawns. Stir-fry for 2–3 minutes until the prawns are completely pink and cooked through.
  3. Season to taste with the salt and lime juice and serve immediately.
