Ingredients

Quantity Ingredient
300g plain flour
1/2 teaspoon salt
5 tablespoons ghee or melted butter

Method

  1. Mix the flour and salt together in a large bowl. Gradually add 2 tablespoons of the ghee and 120ml water and bring together into a dough. Knead for 1 minute until it is soft and pliable, then return to the bowl. Cover with clingfilm and leave to rest at room temperature for 30 minutes.
  2. Divide the dough into 8 equal pieces. Roll each into a circle 2mm thick, then brush the top with ghee. Fold in half, brush the top with more ghee, then fold in half again to form a triangle. Roll until it is 1mm thick.
  3. Heat a large frying pan on a medium heat until very hot. Make one paratha at a time and cook for 1 minute on each side until golden brown in patches. Serve hot.
