Ingredients

Quantity Ingredient
250g plain flour
80g grated fresh coconut
1/2 red onion, finey chopped
1 green chilli, deseeded and finely chopped
1 teaspoon salt
1 tablespoon vegetable oil

Method

  1. Mix the flour, grated coconut, onion, chilli and salt together in a large bowl, then add 100ml water and the oil and work everything together into a stiff, pliable dough. Cover with clingfilm and leave to rest at room temperature for 30 minutes.
  2. Divide the dough into 8 equal pieces, then roll each piece into a ball. Flatten and roll into 15-cm discs, using a little more vegetable oil to prevent them sticking.
  3. Heat a large heavy-based frying pan on a medium heat and pop 2–3 rotis in the pan in a single layer at a time. Cook for 2 minutes on each side until cooked through. Serve hot.
