Whenever I start to feel like I might be coming down with something, I bust out this quick, easy noodle soup and it’s always a comfort. It reminds me of the Vietnamese noodle soup pho and is packed full of nutrients and health-giving ingredients like ginger, chilli and garlic. It’s incredibly versatile because you can add whatever veg you might have lying around, adding fresh herbs, vegetables, bean sprouts and noodles of your choice. This is also a satisfying and light dish if you’re trying to be good, or doing a fast diet, as it has hardly any calories (depending on what you put in it).
