This is my pimped-up version of the classic egg and bacon bap. As well-intentioned as the kale smoothie is, we all know that when you’re really hanging, something much more evil, salty and greasy is needed to hit the spot. I came up with this little breakfast one morning after a launch party, when I had leftover Cumin brioche that needed using up. The lightly spiced demi-brioche is the perfect vehicle for thick bacon, a fried egg and some Sriracha chilli sauce – and we all know how much I love avocado, so I’d put some of that in there too. Any old bap will do, though the Cumin brioche does elevate it to a ‘wow’ dish.
