Baked stuffed tomatoes

Ingredients

Quantity Ingredient
5 shallots
or 1 large brown onion
4 spring onions
2 garlic cloves
500g lean minced pork
salt, to taste
pepper, to taste
1 tablespoon fish sauce
5 large firm but ripe tomatoes
1 tablespoon oil
pinch sugar
chopped coriander

Method

  1. Finely chop the shallots, the spring onions and 1 clove garlic and mix these with the pork mince, salt and pepper and fish sauce. Leave aside.
  2. Cut the tomatoes in halves across, remove and discard the seeds and scoop out the pulp, keeping it aside. Stuff the tomato halves with the meat mixture, place them in a greased oven dish and bake in an oven preheated to 150°C.
  3. Meanwhile chop the remaining clove of garlic and brown it in the oil. Add the tomato pulp and fry until it is soft. Season with salt and pepper. Take the stuffed tomatoes out of the oven and pour the sauce from the pan over them. Sprinkle a pinch of sugar over each tomato and return to a hot oven to caramelise.
  4. Garnish the tomatoes with chopped coriander.
