Pounded green papaya

Ingredients

Quantity Ingredient
4 medium-sized garlic cloves
6 small fresh chillies
or 1 1/2 teaspoons ground chilli flakes
3 cups finely shredded green papaya
1/4 cup ground dried prawns
8 firm cherry tomatoes, halved
or 2 medium tomatoes, cut crosswise into chunky wedges
3 tablespoons lime juice
1-3 tablespoons fish sauce
1-2 tablespoons palm sugar
freshly ground pepper, to taste

Method

  1. In a large earthenware mortar mash the garlic and, if you are using fresh chillies, bruise but do not crush them. Add the papaya, ground dried prawns and tomatoes and mix them roughly with the pestle without mashing them further. Take special care not to break up the tomato too much. In a jar, make a dressing according to taste (it should be quite sweet and hot as well as sour). Start with the lime juice, add fish sauce, sugar and chilli flakes (if that is what you are using), then pepper. Mix the dressing well and taste again, adjusting the flavours. Pour it over the salad and mix everything again lightly with the pestle. Som tam should be eaten with sticky rice.
