Deep-fried chicken with garlic and pepper

Ingredients

Quantity Ingredient
4 garlic cloves
1/2 teaspoon whole peppercorns, ground
3 coriander roots
500g chicken breasts or chicken pieces
vegetable oil, for deep-frying

Method

  1. Grind the garlic, pepper and coriander roots to a paste. Rub the chicken with this and leave to stand for an hour. Heat the oil in a wok or pan and when it is hot drop in the chicken pieces. Fry until the chicken is brown and tender, lowering the heat if necessary to prevent it burning. Drain the chicken pieces on kitchen paper and serve with rice.
  2. Quail are very good treated this way too. Deep-fried chicken or quail with garlic and pepper should be accompanied by the Sweet chilli sauce for chicken that is available in bottles in Asian food stores.
