Ingredients

Quantity Ingredient
3 fresh chillies, seeded and chopped
3 stalks lemongrass, sliced
6 shallots, sliced
500g thick fish fillet without bones, cut into pieces 8 x 4 cm
fish sauce, to taste
12 asian sweet basil leaves
banana leaves or foil
chopped spring onion, for garnish

Method

  1. In a mortar or a food processor attachment mash the chillies, then add the lemongrass and finally the shallots and continue mashing to form a fine paste. Put the fish in a bowl, add the spice paste and fish sauce to taste and the basil leaves, and mix well. Wrap in banana-leaf or foil packets, seal carefully, and steam or grill over charcoal. Garnish with spring onion before serving.
