Ingredients

3 eggs, hard-boiled
2 tablespoons vegetable oil
3 garlic cloves, smashed and finely chopped
200g lean pork mince
2 tablespoons palm sugar or brown sugar
1 teaspoon salt, (optional)
2 tablespoons fish sauce
2 tablespoons lime juice
lettuce, washed and torn into pieces
salad vegetables for six people, (see Note)
1/2 cup peanuts, fried or roasted and roughly ground

Method

  1. Peel the eggs, mash the yolks finely and roughly chop the whites. Leave aside.
  2. Heat the oil in a pan. Add the garlic and then the pork and stir-fry until it is nice and brown. Add the sugar, salt and fish sauce and stir. Take the pan off the stove and mix in the egg yolk followed by the lime juice. Taste and adjust the seasonings to achieve the right balance between sweet, salty and sour for your taste.
  3. Arrange the lettuce on a plate and place the other vegetables decoratively on top. Sprinkle with peanuts, pour the dressing over and garnish with egg-white pieces.

Salad vegetables for six people

  • E.g. small cucumbers, sliced; whole spring onions (scallions), cut into half lengthwise and then into 3 cm lengths; tomatoes, sliced; radish or Chinese turnip, sliced; shallots or red Spanish onions, sliced; mint leaves.
