Fresh green chilli sauce

Ingredients

Quantity Ingredient
6 large green chillies
6 garlic cloves
3 shallots
3 tablespoons fish sauce
1 teaspoon sugar, or more to taste
a few leaves chopped coriander

Method

  1. Grill the chillies, garlic and shallots over charcoal or under a hot griller until they are brown on the outside. Peel off the skins then mash them in the order listed in a mortar or a food processor attachment. Add the fish sauce, sugar and chopped coriander, and blend well.
  2. Eat with grilled fish or grilled meat and sticky rice.
