Sweet corn patties

Ingredients

Quantity Ingredient
2 tablespoons plain flour
1 tablespoon self-raising flour
1 large egg, beaten
375g corn kernels, stripped off the cob
or canned kernels, drained and lightly bruised
200g green prawn meat, chopped
or tiny shrimps, shelled
2 tablespoons chopped spring onions
1 garlic clove, smashed and chopped
2 tablespoons asian celery, chopped
or european celery, finely chopped
salt, to taste
pepper, to taste
2-3 fresh chillies, finely sliced
oil, for frying

Method

  1. Sift the flours and make a batter with the beaten egg. Mix in all the other ingredients, adding a little water if necessary to make the batter smooth. Heat a little oil in a heavy frying pan or griddle and drop spoonfuls of the mixture on to it. Flatten them and fry on both sides until brown.
