Stir-fried water spinach with yellow bean paste

This way of cooking water spinach is also popular in Bangkok.

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
4 shallots, finely sliced
6 garlic cloves, smashed and chopped
2 tablespoons yellow bean paste
1 bunch water spinach, trimmed of the tough stalks, cut into 5 cm pieces, washed and drained
salt, to taste
splash chicken stock or water

Method

  1. Heat the oil in a wok and fry the shallots and garlic until golden. Add the bean paste, water spinach and salt and stir-fry until well coated. Add the chicken stock or water to moisten, put on a lid and cook until the spinach is slightly wilted.
