Ingredients

Quantity Ingredient
2 small chokos
salt
1-2 tablespoons vegetable oil
4 shallots, finely sliced
2 garlic cloves, shredded or chopped
2 slices fresh galangal, bruised
6 small red chillies, seeded and cut diagonally into fine slices
2 cakes firm beancurd, 5 cm square, deep-fried and each cut into 4, (optional)

Method

  1. First peel and core the chokos and cut them into fine matchsticks or julienne strips. Put them in a colander, salt them and leave them to stand for about half an hour to remove some of their water.
  2. When you are ready to prepare the dish rinse the choko under the tap, drain and dry.
  3. Heat the oil in a wok and put in the shallots, garlic and galangal and stir-fry until golden. Be careful not to have the oil too hot or the garlic will burn and taste bitter. Add the chilli and stir-fry a little. Add the choko and salt to taste and stir-fry until cooked and well coated with the spices. Add the fried beancurd at the end to warm it up, and then serve.
