Hot stir-fried beef slices

Ingredients

Quantity Ingredient
500g tender beef, in a piece
1/2 teaspoon freshly ground coriander
salt
2 tablespoons vegetable oil
1 teaspoon palm sugar or brown sugar, or more to taste
1 tablespoon tamarind water

Paste spices

Quantity Ingredient
3-6 red chillies
1cm slice galangal, chopped
2.5 x 2.5cm slice shrimp paste, (optional)
6 shallots, sliced
3 garlic cloves, sliced

Method

  1. Grind the spices to a paste. Cut the beef into slices about 4 cm square and 1⁄2 cm thick and beat with a meat hammer until tender. Rub the slices with coriander and salt and set aside. Heat the oil in a wok and fry the spice paste until it smells cooked. Add the meat slices, the sugar and the tamarind water and stir-fry. Add a splash of water and stir-fry further until everything is dry. Serve with rice and a vegetable dish.
