Fish in banana-leaf packets

Ingredients

Quantity Ingredient
10 shallots
or 2 brown onions
3 garlic cloves
5-10 small red and green chillies, seeded and sliced diagonally
2 handfuls lemon basil leaves
2 spring onions, chopped, green part
salt, to taste
light soya sauce, to taste
piece banana leaf or strong foil, 20–23 cm square for wrapping
vegetable oil
3 small whole sea fish, cleaned and scaled
or 600g fish fillets
a good squeeze lime juice

Method

  1. Chop the shallots and garlic finely and mix the herbs, spices and salt together, moistening with a little light soya sauce. Prepare the pieces of banana leaf or foil as in Pepes cumi-cumi. Put a whole fish or a fillet on each, squeeze lime juice over it and spoon the herb mixture around it on both sides and in the cavity if whole. Roll up the leaves and secure as before. Steam for 10–15 minutes first (or cook it in a microwave if in banana leaves), then grill over a low charcoal fire until the leaves are brown. If you are using foil, you can do the entire cooking over a barbecue.
