Popular as a stew in Indonesia also, semur probably originates from Malacca. The cooking style for this recipe is European but its spicing is Asian.

Ingredients

Quantity Ingredient
500g pork, diced
500g beef, diced
vegetable oil
1 large onion, cut into 8 wedges
1 small stick cinnamon
1 star anise
pinch nutmeg
3-4 potatoes, cut into chunks
1 tablespoon white vinegar, or to taste
sugar, to taste

Marinade

Quantity Ingredient
1 slice ginger
3 garlic cloves
1 tablespoon dark soya sauce
1/2 teaspoon cornflour
pepper, to taste

Method

  1. To make the marinade, crush the ginger and garlic to a paste and add soya sauce, cornflour and pepper. Mix in the meat and marinate for about an hour.
  2. Heat some vegetable oil in a saucepan and sauté the onion until golden. Add cinnamon, star anise and nutmeg and continue frying until fragrant. Put in the meat and the marinade and stir-fry until it changes colour. Add water to cover and simmer, covered, until three-quarters cooked. Add the potatoes (and more water if desired), stir in vinegar and sugar to taste and continue cooking over low heat until the potatoes are cooked. Semur goes well accompanied by rice and Sambal belacan.
