Stirred tomatoes with black beans

Ingredients

Quantity Ingredient
1 tablespoon chinese black beans
1 tablespoon vegetable oil
500g tomatoes, roughly chopped
chopped spring onions, for garnish

Method

  1. Wash the black beans, drain and squash slightly. Heat the oil in a wok, add the beans and fry a little. Add the chopped tomatoes and stir-fry until cooked but not too soft. Dish on to a plate and garnish with chopped spring onions.
  2. This dish is also good using sliced silverbeet instead of tomatoes. It goes well with Ginger beef.
