1 bunch asparagus
1 tablespoon vegetable oil
1 teaspoon smashed and chopped garlic
250g lean pork mince
1/2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon fish sauce
1 tablespoon oyster sauce
250g chopped raw prawn meat

Method

  1. Wash and peel the asparagus and cut diagonally into 2.5 cm lengths. Heat a pan or wok, add the oil and when the oil is hot put in the garlic, pork, salt, sugar, fish sauce and oyster sauce and stir-fry, separating the mince out as you go. When the meat changes colour add the asparagus and stir-fry until it is dark green. Add the prawn meat last, stir-frying some more until it is cooked and the asparagus is cooked but still crunchy.
  2. You can use sliced bamboo shoots instead of asparagus in this recipe.
