Banana, pumpkin and sweet potato in coconut milk

Ingredients

Quantity Ingredient
2 litres all-purpose coconut milk
1 large pumpkin, peeled and cut into 5 cm cubes
4 long white yams, peeled and halved lengthwise and then cut into 5 cm pieces
1 screwpine leaf
or 1 drop pandan essence, (not green pandan paste)
300g indonesian palm sugar, or to taste
1 teaspoon salt
7 bananas, peeled and cut into 1 cm slices

Method

  1. Bring the coconut milk to a boil in a large saucepan. When boiling put in the pumpkin and the yams. Cover and bring back to the boil. Add the screwpine leaf, knotted, and simmer for about 20 minutes.
  2. Ladle about 21⁄2 cups of the coconut milk into a second saucepan, add the palm sugar and salt and stir over medium heat until the sugar is dissolved. Now add the sliced bananas and cook for 10 minutes. Add this to the pumpkin mixture, mix and serve.
