Poached pears with saffron, cinnamon and star anise

These wonderful pears can be made a day in advance and kept, chilled, in the fridge; this will intensify the colour and flavour. If the pears are very hard it will take a little longer to poach them until they are tender all the way through. You may find they need up to an hour, because some of the hardest pears seem to take forever! Very ripe pears won’t need much time at all. I like to use Comice pears for this pudding, if possible. Serve them with crème fraîche, mascarpone cheese or thick Greek yogurt. Served standing up, these are pears on parade!

Ingredients

6 small, equal-sized pears
150g caster sugar
3 star anise
1 cinnamon stick
or 2 cassia barks
generous pinch saffron threads
1 unwaxed lemon, finely grated zest
1/2 unwaxed lemon, juiced

Method

  1. Peel the pears, leaving the stalks intact. Cut a very thin slice from the base of each pear so that it sits upright. Place in a bowl of water to prevent them from discolouring.
  2. In the meantime, put the sugar, 1 litre of water, the star anise, cinnamon or cassia, saffron and lemon zest in a saucepan big enough to hold the pears. Heat gently until the sugar dissolves, then bring to the boil. Add the pears, reduce the heat and poach at a gentle simmer for up to one hour, until tender to the point of a knife.
  3. Remove the pears from the poaching liquid and lie them flat in a deep dish which will hold both the pears and the syrup.
  4. Return the poaching liquid to the boil, and bubble for 10 minutes or so until the liquid is well reduced and syrupy. Squeeze over the lemon juice and strain the syrup evenly over the pears. When ready to serve, stand the pears upright and spoon over the syrup.
