Ingredients

Quantity Ingredient
2 bay leaves
1 cinnamon stick
5 cardamom pods
5 cloves
4 black peppercorns
1 slice root ginger
3 heaped tablespoons ceylon tea leaves
75ml evaporated milk
caster sugar, to taste

Method

  1. Pour 1 litre of cold water into a saucepan and add the bay, cinnamon, cardamom, cloves and peppercorns. Bring to a boil over a high heat. Add the ginger and cook for another two minutes, then add the tea leaves. Return to the boil and cook for one minute, then reduce the heat to a minimum and allow to steep for around two minutes. If you like strong tea, leave it for a further five minutes. Add the evaporated milk and sugar to taste and strain into a cup or teapot ready to serve.
