Ingredients

Quantity Ingredient
12 fresh figs, ideally Black Mission
1/2 lemon, juiced
4 tablespoons runny honey
1/2 teaspoon ground cardamom
2 teaspoons sumac
500g greek yogurt
100ml whole milk
ice cubes

Method

  1. Preheat the oven to 180°C.
  2. Cut the figs into quarters and drizzle over the lemon juice and honey. Sprinkle over the cardamom and half the sumac. Roast in the hot oven for 10–15 minutes. Remove and allow to cool.
  3. Put the yogurt, milk and cooled figs with their juices into a blender or smoothie maker with a few ice cubes. Blitz until smooth. Pour into chilled glasses and sprinkle with the remaining sumac to serve.
