For the pickle

1 teaspoon cumin seeds
2 teaspoons coriander seeds
6 medium-sized green unripe mangoes
2 teaspoons chilli powder
1/4 teaspoon turmeric
1 teaspoon ground mustard seeds
80ml cider vinegar
4-5 tablespoons caster sugar
salt

For the tempering

150-160ml vegetable oil
1 teaspoon black mustard seeds
2 teaspoons cumin seeds
1/2 teaspoon nigella seeds
1/2 teaspoon fenugreek seeds

Method

  1. Put the cumin and coriander seeds into a small dry frying pan and place over a medium heat. Stir until the seeds have darkened slightly and smell aromatic. Tip into a mortar and grind to a powder with the pestle. Wash and dry the mangoes and peel them. Grate the flesh, discarding the stone. Place the grated mangoes into a mixing bowl and add all the other ingredients for the pickle.
  2. Heat the oil in a frying pan until hot over a medium-high flame. Once the oil begins to smoke, add the mustard and cumin seeds. Once they pop and splutter, add the nigella and the fenugreek seeds. After a few seconds, remove from the heat and allow to cool. Once cool, pour on to the grated mango. Transfer into a clean, dry airtight jar.
