Skordalia is a very garlicky sauce that is often served alongside salt cod dishes. It can be made with bread, rather than potatoes as it is here, and sometimes doesn’t contain almonds. The one constant though, is the garlic. My friend Gina, from Milos, recommends eating coffee grounds to get rid of the taste, and says it is a dish that either everyone at dinner must eat, or no one!
Don’t be tempted to use a food processor or blender to mash the potato, as it will become gluey and inedible. A potato ricer is the best tool.
