Baklava rolls are notoriously tricky to make, but this is a much simpler way. Many of the islands don’t have pistachio trees, so baklava are made with local nuts instead, in this case, walnuts. Sheets of filo come in various sizes, so you may need to use 4 smaller sheets and not cut them in half. They're delicious served with strong Greek coffee.

125g unsalted butter, melted
200g walnut pieces
3 tablespoons caster sugar
2 large sheets filo pastry

Syrup

100g caster sugar
1/2 lemon, juiced

Method

  1. Preheat the oven to 170ºC. Grease a baking tray with a little of the butter.
  2. Start with the rolls. Using a mortar and pestle, roughly crush the walnut pieces. (Alternatively place in a sandwich bag and bash with a rolling pin.) Add the sugar.
  3. Lay a sheet of filo out on a work surface and cut into 2 rectangles each measuring about 30 × 20 cm. Brush with melted butter. Scatter about a quarter of the walnuts evenly over the filo. Working from a short edge, begin to roll up the filo like a Swiss roll. Brush with butter every time you expose un-buttered pastry. Continue until you run out of pastry.
  4. Transfer the filled roll of pastry to the prepared tray. Continue rolling and buttering more pastry and nuts until you have run out of nuts. Using a sharp knife, slice each roll of pastry into 5–6 evenly sized pieces.
  5. Place in the oven and cook for 20 minutes, until golden brown all over and crisp.
  6. Meanwhile make the syrup. Pour 120 ml of water into a saucepan and add the sugar and lemon juice. Bring to the boil and boil for 10 minutes, reducing the volume by about a quarter. Remove the pastries from the oven and place in a single layer in a shallow dish, then pour over the syrup. Leave for 30 minutes or so for the syrup to soak into the pastry.
  7. Serve with strong Greek coffee.
