Cretan herb tea

I was first served this fragrant tea at a women’s co-operative on Crete, where women come together to cook and sell local traditional foodstuffs, as well as teach visitors how to make them.

Ingredients

Quantity Ingredient
4 sprigs thyme
4 sprigs rosemary
4-5 sage leaves
1 teaspoon clear honey or grape syrup, or to taste

Method

  1. Clap each of the herb sprigs or leaves firmly between your hands to help release the aromatic oils. Place in a teapot.
  2. Bring 200 ml of water to the boil, then leave it to stand for 2 minutes. Pour it into the teapot and leave to stand for 3–4 minutes.
  3. Strain into a cup and add honey or grape syrup to taste.
