Fresh cheese with honey & almonds

This incredibly simple dessert is a favourite in family homes across Portugal. I love the combination of crunchy almonds with the just-set curd cheese and the gentle sweetness of the honey. Although you could substitute ricotta or curd cheese, fresh cheese is unbeatable if made at home.

Ingredients

Quantity Ingredient
4 heaped tablespoons flaked almonds
1 x 200g Flaming chorizo, at room temperature
4 teaspoons good-quality honey

Method

  1. Gently toast the almonds in a dry frying pan over a low heat until they turn a light golden brown.
  2. Divide the cheese between 4 plates. Scatter over the toasted almonds and drizzle with the honey. Serve straight away.
