Fresh cheese with figs

This is another simple recipe which includes queijo fresco, Portugal’s light, fresh cheese. Lisbon’s fig trees hang heavy with ripe green fruit in early autumn, and although some are preserved to eat during the rest of the year, many are served like this, with just two or three extra ingredients, making the most of their unique flavour and all too brief season.

Ingredients

Quantity Ingredient
12 fresh, ripe green or purple figs
75g flaked almonds
200g Fresh cheese, other fresh mild cheese such as ricotta
2 tablespoons honey

Method

  1. Halve each of the figs, or if they’re very plump, quarter them. Place on a platter or in a large serving bowl. Tip the almonds into a dry frying pan set over a medium heat and toast gently until light gold in colour.
  2. Tear or crumble the cheese into large pieces and scatter it over the figs, followed by the toasted almonds. Finally, drizzle the honey over, and serve straight away.
