Peas with sesame

Nutty toasted sesame with peas makes a surprisingly good combination. If you like heat, you could add a pinch of dried chilli flakes before serving.

Ingredients

Quantity Ingredient
400g garden peas, fresh or frozen
1 tablespoon sesame seeds
2 tablespoons extra-virgin olive oil
salt
freshly ground black pepper
2 tablespoons finely chopped flat-leaf parsley, to serve (optional)

Method

  1. Place the peas in a pan of salted boiling water. If frozen, just bring back to the boil, but if using fresh you’ll need to cook them for a few minutes longer, until tender.
  2. While the peas are cooking, toast the sesame seeds in a dry pan over a medium heat for a minute or two, tossing and turning them often, until golden.
  3. Drain the peas, tip them into a bowl and add the oil and seeds, along with a small pinch of salt and some pepper. Toss and, just before serving, add the chopped parsley, if using.
