The salads I made in Lisbon were hefty creations – brimming with chickpeas, or salt cod, soft-boiled eggs or fresh cheese, their flavours intensified with generous amounts of garlic, salt, olive oil and vinegar. There were no quiet green side salads, only punchy, crunchy, spicy tangles of leaves, cucumber, avocado, figs, or peach, tumbled together with fresh herbs, chilli, onion and plenty of salt, served on big platters in our yellow-walled courtyard garden.
