This is another delicious recipe by Hugo Gonçalves at Foxtrot cocktail bar in Lisbon, but of a more innocent kind, as it contains no booze.

Ingredients

Quantity Ingredient
50m citrus & cardamom syrup
1 tablespoon freshly squeezed lime juice
1 tablespoon freshly squeezed lemon juice
20 basil leaves, or enough to turn the purée a vibrant green
crushed ice

Method

  1. Blitz all the ingredients, except the ice, together in a blender until the basil is as smooth as possible and liquid is a lovely green colour. Strain into a glass filled with crushed ice. Stir to combine. Ideally, pour into a small milk bottle to serve (to be true to the original as served at Foxtrot).
