Ingredients

Quantity Ingredient
5 garlic cloves
1 tablespoon salt
2 duck legs
1 tablespoon duck fat
sea salt, to taste
4 Corn tortillas
1/2 Corn chips with guacamole, guacamole only

Nectarine salsa

Quantity Ingredient
1 white nectarine, diced
1 yellow nectarine, diced
small handful coriander leaves, finely chopped
1/4 white onion, finely diced
1/4 lime, juiced

Method

  1. In a small saucepan, combine 1 litre water with the garlic and salt to make a brine. Warm over medium heat until the salt dissolves, then transfer the liquid to a bowl and set aside to cool. Add the duck legs to the cooled brine. Cover and refrigerate overnight.
  2. The next day, remove the duck legs from the brine and pat them dry with paper towel. Pierce the legs in several places with a sharp skewer. Try to pierce into the underlying fat without piercing into the flesh. This will help the fat escape from under the skin so the skin will become crispy.
  3. Put the duck fat into a small roasting tin. Add the duck legs and roast in the oven at 170°C (without preheating) for 2 hours, or until the meat is tender and the skin is really crispy.
  4. To make the nectarine salsa, combine all of the ingredients in a bowl.
  5. When the duck legs are ready, remove them from the oven and let them rest for a few minutes.
  6. Meanwhile, warm the tortillas. Heat a non-stick frying pan over high heat. Warm the tortillas for about 10 seconds each, or until they become soft and pliable.
  7. With a sharp knife gently remove the crispy skin from the duck legs. Cut each piece of skin into 3 equal-sized pieces. Shred the meat from the bones. In a bowl, combine the shredded meat with 2–3 tablespoons of the roasting tin juices and a good pinch of sea salt.
  8. Spread some of the guacamole onto each tortilla. Add a little confit duck and some of the salsa then top with the crispy skin.
