Ingredients

Quantity Ingredient
1 egg white
250g icing sugar
1 teaspoon green food dye
2 teaspoons natural peppermint extract
150g dark cooking chocolate
1 quantity Donuts

Method

  1. Whisk together the egg white and icing sugar until combined. Add the food dye and the peppermint essence and continue to whisk until you can drizzle lines of the mixture, using a spoon, which don’t instantly disappear back into the mixture. If the mixture is too runny, add a touch more sugar.
  2. Fill a piping bag with the mixture and use a size 1 mm nozzle to pipe long lines onto baking paper. Let the lines dry overnight.
  3. When the mixture has set, cut the lines into small peppermint sprinkles.
  4. Melt the chocolate in a heat-proof bowl placed over a saucepan of simmering water.
  5. Dunk the donuts in the melted chocolate then scatter over the peppermint sprinkles.
