Pork belly and ribs with curry leaves, coconut and tomato

Pork responds very well to the spice treatment. Its rich flavour is accentuated and cut through at the same time by the pungency of the spices. Slightly acidic flavours such as tomato, tamarind or kokum are often used with pork in Indian cooking. This simple South Indian dish uses fresh chillies, tomatoes, coconut and curry leaves. We serve it at the Spice Kitchen with string hoppers – steamed rice noodle pancakes. You could serve it with steamed basmati or other long-grain rice and a green salad, or with rice noodles.

Ingredients

1 tablespoon Ginger paste
1 tablespoon Garlic paste
1 tablespoon palm sugar or dark brown sugar
1/2-1 teaspoon salt, or to taste
500g pork belly, cut into 2.5 cm pieces
500g pork ribs, cut into 2.5 cm pieces
2 tablespoons vegetable or canola oil
2 onions, chopped
100g fresh coconut flesh, diced, (see note)
or 2 tablespoons desiccated coconut
20 curry leaves
2 large tomatoes, chopped
4 green chillies, chopped
2 tablespoons coriander leaves, chopped

Method

  1. Preheat the oven to 180°C.
  2. Mix together the ginger and garlic pastes, sugar and salt in a large bowl. Add the pork belly and ribs and evenly coat with the paste mixture.
  3. Put the pork in a roasting tin and cook in the oven for about 30 minutes, or until tender. Remove from the oven and leave the pork to rest for 20 minutes. Drain off or scoop off any fat and discard.
  4. Heat the oil in a large heavy-based saucepan over a medium heat. Sauté the onion, stirring occasionally, for about 5 minutes, or until golden brown. Add the coconut and cook, stirring, for 2 minutes.
  5. Stir in the curry leaves, tomato, chilli, coriander and roasted pork and cook for 5 minutes, stirring occasionally. Serve hot.

Note

  • You should have about 1 cup of diced fresh coconut.
