Cachaça and lime chicken skewers

Cachaça is one of the most popular alcoholic drinks in Brazil, made from fresh sugar cane juice that is first fermented, then distilled. As well as being one of the base ingredients for making caipirinhas, the well-known cocktail, it can also be used as it is here to marinate these delicious chicken skewers, which helps to keep the meat moist. Use vodka if cachaça is unavailable.


Quantity Ingredient
8 bamboo skewers
1/4 cup cachaca
1 lime, finely zested and juiced
1 small handful coriander leaves, finely chopped
1 long green chilli, seeded and finely chopped
2 tablespoons olive oil
1 tablespoon honey
1 garlic clove, crushed
1 teaspoon sea salt
3 skinless chicken breast fillets, cut into 2.5 cm cubes
vegetable oil, for brushing


  1. Soak the bamboo skewers in cold water for 30 minutes to prevent them from burning during cooking.
  2. Combine all of the ingredients, except the chicken and vegetable oil, in a non-reactive bowl. Add the chicken and toss to coat. Cover and leave to marinate in the refrigerator for 1–2 hours.
  3. Thread the chicken onto the skewers, approximately four pieces on each skewer.
  4. Preheat a barbecue chargrill to medium. Brush a little vegetable oil over the chargrill and cook the chicken skewers for 6–8 minutes, turning occasionally, until cooked through and lightly charred. Serve with quinoa salad and grilled corn.
