Passionfruit is the fruit of the native vine found growing in the rainforests of Brazil. In this dessert, the sweet tangy pulp is used to make a smooth and creamy mousse that has been sweetened with condensed milk. It is best to use fresh passionfruit, however if unavailable, you can substitute with tinned passionfruit pulp and adjust the sweetness by adding less condensed milk and more cream. This mousse can be made a day in advance and frozen.

Ingredients

Quantity Ingredient
1 cup pouring cream
1/2 cup tinned condensed milk
1/2 cup passionfruit juice, plus extra pulp for decorating
1 tablespoon lime juice

Method

  1. Using an electric mixer fitted with a whisk attachment, whip the cream until soft peaks form.
  2. In a separate bowl, mix together the condensed milk, passionfruit juice and lime juice. Add the cream and stir to combine. Pour into a 20 cm glass pie dish or six shallow serving glasses. Cover and refrigerate for 1 hour.
  3. Drizzle with the extra passionfruit pulp, to serve.
