Baked apricots with almond butter

If it’s summer and you’re having a barbecue, try wrapping your apricots in foil and putting them on the grill while the coals are still warm. This makes for a lovely al fresco dessert, although if it is a truly British barbecue it will most likely be eaten sitting under a parasol in the rain. Apricot and almonds pair beautifully, but this dish also works very well with plums and nectarines.

Ingredients

Quantity Ingredient
6 apricots, halved with stones removed
a little sunflower oil, for greasing
3 tablespoons almond butter
drizzle honey
50g flaked almonds
6 tablespoons natural yoghurt

Method

  1. Wait until the BBQ coals are hot but no longer have any flames. Wrap the apricots loosely in foil and place on the grill for about 20 minutes.
  2. You can also cook these in the oven: just preheat the oven to 200°C and lightly grease a baking tray.
  3. Place the halved apricots on the baking tray and bake for 20 minutes, until nice and soft.
  4. Drizzle the cooked apricots with the almond butter, some honey, the flaked almonds and a few spoonfuls of yoghurt.
