Our friends over at The Detox Kitchen, who have a couple of amazing cafés in London, really know their way around the kitchen. They created this dressing using our almond butter, and it featured as a special on their menu for a month. It was so tasty, in fact, that we couldn’t resist putting it in our book.

Ingredients

Quantity Ingredient
1 lime, juiced
1 tablespoon tamari
1 tablespoon groundnut oil
50g Plain nut butter, we used almond
pinch salt

Method

  1. Place all the ingredients in a bowl and mix well with a spoon.

Pip’s top tip:

  • The dressing tastes great on a simple green salad but The Detox Kitchen do a wicked one using 1 finely sliced head of kale, ¼ white cabbage cut into thin strips, 2 finely chopped sun-dried tomatoes and 1 finely chopped spring onion. Simply assemble all the ingredients in a bowl, toss with the dressing and sprinkle with pumpkin seeds.
