A sweet little dressing to tart up any salad. It’s especially good over a French bean salad.

Ingredients

Quantity Ingredient
2 tablespoons Plain nut butter, we used cashew
1/2 lemon, Finely grated zest and juice
3 tablespoons water
1/2 teaspoon finely grated orange zest
1/2 tablespoon runny honey
1/2 garlic clove, very finely chopped
2 tablespoons olive oil
sea salt
freshly ground black pepper

Method

  1. Put all the ingredients, except the olive oil, into a small bowl. Then slowly pour in the olive oil, a little at a time, stirring as you go.
