Crushed, smashed, mashed or puréed, are all a good way of describing a lovely side dish that makes a great alternative to your usual boiled variety. The nutty flavour of the peanut butter really complements the sweet carrots.

Ingredients

Quantity Ingredient
800g carrots
knob unsalted butter
1 tablespoon Plain nut butter, we usd peanut
2 teaspoons runny honey
sea salt
freshly ground black pepper
2 tablespoons chopped parsley, to serve

Method

  1. Peel the carrots, halve lengthways and cut into 2cm pieces. Steam for 25 minutes, until tender, then transfer to a medium bowl and mash with a fork or potato masher. Stir in the butter, peanut butter and honey, and season with salt and pepper. Sprinkle with chopped parsley to serve.
