Sweet potato in a smoothie. Yes. It does work. In fact not only does the sweet potato make the smoothie a lovely texture, it really keeps you going right up until lunch.

Ingredients

Quantity Ingredient
150g sweet potato
1/2 mango
1 cm piece fresh ginger, grated
2 tablespoons cashew butter
2 teaspoons maple syrup
200ml unsweetened almond milk
2 ice cubes

Method

  1. Microwave the sweet potato until it is soft throughout. Scrape the flesh out of the skin and leave to cool.
  2. Put into a blender with the remaining ingredients and blitz until smooth.
