Despite its unglamorous-sounding ingredients, this is perfect for making a big batch of, setting it in the middle of the table and letting guests help themselves to large ladlefuls. Add a bit more stock if you want it to be a chunky soup – it goes beautifully with salty buttered French bread – but it’s rich and wonderfully indulgent as it is.

25g butter
1 small leek, chopped
6 good-quality sausages
1 red pepper, deseeded and chopped
1 tablespoon marjoram, chopped
125ml red wine
200ml beef stock
1 tablespoon tomato puree
400g tinned white beans, drained, such as butter or cannellini
salt
black pepper

Method

  1. Put the butter into a heavy-bottomed casserole dish with a lid and set it over a medium heat. Once melted, add the leek and let it sweat for 1 minute. Cut the skin of the sausages and squeeze the meat out of the skin and into the dish. Stir the meat as it cooks to help it to break up a bit, and when it begins to brown add the pepper and marjoram.
  2. After about 10 minutes or so the meat should look cooked through and the pepper should be quite soft. Add the wine and turn the heat up, letting the liquid bubble away and reduce. Once it looks like it is drying out, add the stock, tomato purée, the beans, a pinch of salt and a couple of hearty grinds of black pepper. Stir everything together, put the lid on and turn the heat down so that the stew stays at a rolling simmer for 45 minutes.
  3. Serve with a baked sweet potato and your choice of greens – and try to keep a bit in the fridge for the next day. It really will taste even better.

Substitute the marjoram with...

  • Sage, basil or thyme.
