Whether it be fish, poultry, beef, lamb or vegetarian, the main course is traditionally the focus dish of a dinner party. In restaurants the main course is generally plated individually, so when I entertain at home I like to serve the main fare on large plates or platters for my guests to share. This creates a friendly, more playful, atmosphere, very different from the formality of restaurant dining. Of course these dishes can be served individually if you prefer. Always try and source sustainable fish and happy chickens and meats; organic and free range whenever possible. We should not take the amazing produce available to us for granted, so do some research and find out where your food comes from. You’ll enjoy it more if you have peace of mind.
