Grilled yellowtail with cassava rice and star fruit salad

The sea gypsies of Indonesia originated from Malaysia and now live in the Banda Sea on tiny islands or rock atolls. Their houses are built on stilts above the ocean. We were invited into such a house, where this simple but delicious meal was slow-cooked over an open fire. There was lots of smoke and it was unbelievably hot in the house, but everyone was so happy to have us there. It was certainly an experience that I will remember for the rest of my life.

Ingredients

Quantity Ingredient
12 whole yellowtail or slimy mackerel, scaled and cleaned
vegetable oil, for brushing
Cassava rice, to serve
Star fruit salad, to serve

Method

  1. Preheat a barbecue grill to medium–high. Lightly brush with oil and cook the fish for 4 minutes each side or until just cooked through.
  2. Serve with the cassava rice and star fruit salad.

Note

  • To get a smoky flavour into the fish, you could rub a bit of liquid smoke on the fish or cook it over a wood fire.
