These beautiful potatoes do not grow in the ground but on a vine, hence their name. You can substitute any potato or sweet potato. This salad is an excellent accompaniment to the barbecued island beef with salsa verde.

Ingredients

Quantity Ingredient
1kg sky potatoes or red potatoes, cut into 2 cm cubes
1 onion, finely diced
4 spring onions, thinly sliced
50ml lime juice
garlic, minced with a pinch of salt
1 tablespoon white sugar
1 teaspoon cracked black pepper
100ml olive oil

Method

  1. Place the potato in a saucepan of cold salted water over high heat, bring to the boil and cook for 15 minutes or until tender. Drain well.
  2. Combine the warm potato with the remaining ingredients and gently mix.
