This partners well with pork or seafood, and the coconut adds a nice depth and richness.

Ingredients

Quantity Ingredient
1 carrot, cut into julienne
2 green chillies, finely shredded
1 small onion, finely diced
1 lime, juiced
garlic, very finely chopped
1/2 cup freshly grated coconut
1 sprig curry leaves, finely shredded
2 teaspoons maldive fish flakes, (see glossary)
salt and ground black pepper, to taste

Method

  1. Combine all of the ingredients in a small bowl and set aside until ready to serve.
